Creamy lime jello salad with pineapple and pecans is a crowd-pleasing, refreshing green dessert.
Ingredients:
  • 1 cup boiling water
  • 1 (6 ounce) package lime flavored Jell-O® mix
  • 1 (20 ounce) can crushed pineapple, drained with juice reserved
  • 1 (8 ounce) package cream cheese, softened
  • 2 cups heavy cream
  • 1 cup chopped pecans
Instructions:
  • Prepare your ingredients.
  • In a large bowl, mix boiling water and gelatin until dissolved. Add 1/2 cup pineapple juice and refrigerate until slightly thickened, for about 1 hour.
  • In a small saucepan, bring crushed pineapple and its juice to a boil. Simmer for 5 minutes, then remove from heat and let it cool to room temperature. Blend softened cream cheese and gelatin until smooth, then mix in the cooled pineapple.
  • Whip cream in a chilled glass or metal bowl with an electric mixer until soft peaks form.
  • Gently incorporate cream into the gelatin mixture, followed by the chopped nuts. Transfer the delightful mixture into an elegant glass bowl, and refrigerate for a minimum of 4 hours, or until firm.
