Holiday favorite vintage lime and lemon salad with crushed pineapple, pecans, cottage cheese, and mayonnaise for a sweet creamy-crunchy delight.
Ingredients:
  • 1 cup crushed pineapple, drained with juice reserved
  • 1 cup water, or as needed
  • 1 (3 ounce) package lime flavored Jell-O® mix
  • 1 (3 ounce) package lemon flavored Jell-O® mix
  • 1 cup mayonnaise
  • 1 cup canned evaporated milk
  • 1 cup small curd cottage cheese
Instructions:
  • Combine reserved pineapple juice and water in a large measuring pitcher to make 2 cups. Pour the mixture into a pot and bring to a boil. Stir in the lime and lemon gelatin mixes until fully dissolved.
  • Combine mayonnaise and evaporated milk in a mixing bowl. Gently fold in the gelatin mixture until well combined. Add crushed pineapple, cottage cheese, and pecans. Transfer the mixture into a serving bowl and chill for at least 4 hours or overnight.
