Tangy lime gelatin, fluffy topping, and juicy blueberries combine for a beautiful, refreshing molded salad perfect for any outdoor gathering.
Ingredients:
  • 1 (3 ounce) package lime flavored Jell-O® mix
  • 1 tablespoon sugar
  • 2 tablespoons lime juice
  • 1.5 cups boiling water
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 1 pint fresh blueberries
Instructions:
  • Whisk gelatin mix, sugar, lime juice, and boiling water in a medium bowl for one minute until gelatin dissolves. Cover and chill for one hour until slightly thickened.
  • Once the gelatin mixture has thickened, whip it until it becomes lighter in color and doubles in volume using a whisk or electric mixer. Add in the whipped topping, and gently fold in the blueberries. Grease a 5 or 6 cup gelatin mold lightly, fill it with the gelatin mixture, and then chill for 4 hours or until it sets. Carefully unmold the gelatin onto a platter and serve.
