Indulge in homemade blueberry Bisquick® muffins, a delightful treat for your loved ones.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 1/2 cup packed brown sugar
  • 1 teaspoon grated lime peel
  • 3/4 cup milk
  • 1/4 cup butter, melted
  • 1 egg
  • 1 cup fresh or frozen (do not thaw) blueberries
  • 1/2 cup powdered sugar
  • 1 tablespoon fresh lime juice
  • Additional grated lime peel, if desired
Instructions:
  • Preheat oven to 400°F and line 12 regular-size muffin cups with paper baking cups.
  • Combine baking mix, brown sugar, and 1 teaspoon lime peel in a large bowl. In a separate small bowl, whisk together milk, butter, and egg until well blended. Create a well in the center of the dry ingredients and gently fold in the egg mixture until just moistened. Gently stir in the blueberries. Scoop the batter evenly into muffin cups, filling each three-fourths full.
  • Bake for 16 to 18 minutes until a toothpick inserted in the center comes out clean and the tops are golden brown. Allow to cool for 5 minutes, then transfer from pan to a cooling rack.
  • In a small bowl, blend powdered sugar and lime juice until smooth. Drizzle over muffins, top with extra lime zest. Enjoy muffins warm or at room temperature.
