Ingredients:
  • 225.00 gm self-raising flour
  • 225.00 gm sugar
  • 2.50 gm ground cinnamon
  • 115.00 gm vegetable oil
  • 2 eggs, well beaten
  • 4.40 gm vanilla essence
  • 250.00 ml grated carrot
  • 125.00 ml crushed pineapple
Instructions:
  • Preheat your oven to 180C and grease a mini muffin pan.
  • Combine the flour, sugar, and cinnamon in a mixing bowl using a low speed setting.
  • Drizzle in oil and mix until well combined. Add eggs, grated carrot, vanilla, and crushed pineapple. Blend on medium speed for 3 minutes or until fully incorporated. Transfer the mixture into the prepared pan.
  • Preheat the oven to 350°F and bake for 15 minutes until fully cooked.
