Healthy Protein Morning Glory Muffins

Morning glory muffins with pineapple and carrot juice pulp, and hempseed for a fresh, hearty breakfast or brunch treat.
Ingredients:
  • 1 fresh pineapple - peeled, cored, and sliced
  • 4 carrots, trimmed
  • 3 zucchini
  • 1 cup quinoa
  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1.5 teaspoons baking soda
  • 1.5 teaspoons baking powder
  • 1 pinch nutmeg
  • 1 cup applesauce
  • 1 cup nonfat Greek yogurt
  • 3 eggs
  • 1 tablespoon coconut oil
  • 1 tablespoon vanilla extract
  • 0.5 cup hempseed
  • 0.5 cup raisins
Instructions:
  • Juice pineapple and carrots following the juicer's directions. Transfer the juice to a container and keep the pulp in a separate bowl. Juice the zucchini and stir its pulp into the pineapple-carrot mixture. Dispose of the zucchini juice.
  • Pour 2 cups of pineapple-carrot juice into a saucepan. If it's less than 2 cups, add water to reach 2 cups. Bring the juice and quinoa to a boil, then simmer covered until quinoa is cooked and liquid is absorbed, about 15 to 20 minutes. Measure out 1 cup of cooked quinoa and let it cool.
  • Preheat the oven to 350 degrees F (175 degrees C), then prepare 16 silicon muffin cup molds by greasing them and arranging them on a baking sheet or lining a muffin tin with paper liners.
  • Combine whole wheat flour, all-purpose flour, cinnamon, baking soda, baking powder, salt, and nutmeg in a bowl, sifting them together.
  • Combine applesauce, yogurt, sugar, eggs, coconut oil, and vanilla extract in a bowl. Gradually mix this applesauce mixture into the flour mixture until just combined. Gently fold in the reserved 1 cup cooked quinoa, hemp seeds, raisins, and pineapple-carrot-zucchini pulp. Let the batter rest for 5 to 10 minutes before proceeding.
  • Fill each muffin cup generously with a 1/3 cup of batter.
  • Bake in the preheated oven for 23 to 27 minutes or until a toothpick inserted in the center comes out clean. Allow muffins to cool in the tin for 5 minutes before removing from cups.
