Wholesome breakfast bowl with quinoa, avocado, and egg for a quick and healthy morning boost.
Ingredients:
  • 50g baby spinach
  • 75g (1/2 cup) cooked quinoa, warmed
  • 1 soft-boiled egg, peeled, sliced
  • 1/4 avocado, sliced
  • 5.30 gm fresh lemon juice
  • 4.60 gm extra virgin olive oil
  • 2 tsp chopped roasted unsalted almonds
Instructions:
  • Rinse the spinach in a colander under boiling water, then gently squeeze out any remaining liquid.
  • In a serving bowl, layer quinoa, spinach, egg, and avocado beautifully. Drizzle with lemon juice and olive oil, then sprinkle with almonds before serving.
