Protein-packed breakfast with layers of black beans, scrambled eggs, creamy avocado, and zesty salsa.
Ingredients:
  • 2 tablespoons olive oil
  • 4 eggs, beaten
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 avocado, peeled and sliced
  • 0.25 cup salsa
  • salt and ground black pepper to taste
Instructions:
  • In a small pan over medium heat, warm the olive oil. Stir and cook the eggs until they are fully set, which should take about 3 to 5 minutes.
  • In a microwave-safe bowl, microwave the black beans on High until warmed through, approximately 1 minute.
  • Divide warm black beans evenly into two bowls.
  • Garnish each bowl with fluffy scrambled eggs, creamy avocado slices, and a dollop of zesty salsa. Sprinkle with a touch of salt and freshly ground black pepper to taste.
