Cheese-filled tortillas topped with spicy black beans, salsa, and a fried egg make a tasty and satisfying black bean huevos rancheros breakfast.
Ingredients:
  • 1.5 cups fresh tomatoes, seeded and finely chopped
  • 0.25 cup sliced green onions
  • 0.25 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 fresh jalapeno pepper, seeded and finely chopped
  • salt, to taste
  • 2 teaspoons canola oil
  • 1 (19 ounce) can black beans, drained and rinsed
  • 0.5 cup chicken broth
  • 1 teaspoon chopped chipotle chiles in adobo sauce
  • 8 (7 inch) flour tortillas
  • 0.5 cup shredded Monterey Jack cheese
  • 4 eggs
Instructions:
  • Prepare the salsa by mixing together tomatoes, green onions, cilantro, lime juice, jalapeno pepper, minced garlic, and salt in a bowl until fully combined. Chill in the refrigerator until ready to serve.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and lightly grease a baking sheet for a flawless cooking experience.
  • Heat canola oil in a skillet over medium heat. Sauté garlic until light brown, about 1 minute. Add black beans, chicken broth, and chiles. Simmer until beans are heated through, about 5 minutes. Keep warm before serving.
  • Lay out four tortillas on the baking sheet. Sprinkle cheese evenly over the tortillas and cover with the remaining four tortillas. Securely cover the baking sheet with aluminum foil.
  • Bake tortillas in a hot oven until cheese is gooey, for about 5 minutes.
  • Heat 1 teaspoon of canola oil in a skillet over medium heat. Crack eggs into the skillet and cook to your liking.
  • For preparing huevos rancheros: Layer cheese-filled tortillas on four serving plates. Add black bean mixture, salsa, and an egg on top of each tortilla. Serve promptly.
