Delicious vegetarian tacos filled with black beans, sweet corn, avocado, and Mexican cheese. Ready in just 15 minutes for a hearty meatless meal.
Ingredients:
  • 15.5 ounces black beansdrained, rinsed
  • 15.5 ounces sweet kernel corndrained
  • 1 tablespoon Cuban seasoning
  • 6 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1 avocadopitted, sliced
  • 1 cup shredded Mexican cheese
Instructions:
  • Combine beans, corn, and seasoning in a medium bowl. Set aside.
  • Preheat a grilling pan coated with non-stick cooking spray. Place tortillas in the hot pan and grill for about 1 minute per side until grill marks form. Repeat for all tortillas.
  • Divide the bean and corn mixture evenly among the tortillas. Layer with avocado slices and cheese.
