Quick and easy Mexican black bean breakfast tostadas - perfect for starting your day with a tasty brunch!
Ingredients:
  • 4 tostada shells
  • 1 (15.25 ounce) can black beans, rinsed and drained
  • 1 medium avocado, peeled and pitted
  • 2 tablespoons lime juice
  • 4 slices pepper Jack cheese
  • 1 tablespoon vegetable oil
  • 0.25 cup salsa
  • salt and freshly ground black pepper to taste
Instructions:
  • Arrange tostada shells evenly on 4 plates.
  • In a bowl, gently mix together black beans, avocado, and lime juice. Spread the mixture evenly onto tostada shells and add a slice of cheese on top of each.
  • In a sizzling skillet, gently drop the egg into shimmering oil. Allow it to cook undisturbed for 2 minutes until the edges are crisp. Carefully flip and cook for an additional 2 minutes until perfectly set. Place the egg on top of a crispy tostada shell. Repeat with the rest of the eggs.
  • Spoon salsa over eggs, sprinkle with salt and pepper, and serve right away.
