Whip up a speedy Mexican chilaquiles using canned black beans and pantry basics.
Ingredients:
  • 1 tablespoon vegetable oil
  • 4 cups tortilla chips
  • 6 large eggs
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 cups chipotle salsa
  • 0.5 cup crumbled queso fresco
  • 0.25 cup diced red onion
  • 1 avocado, sliced
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • First, heat oil in a large skillet over medium-high heat until it glistens. Cook chopped onion until slightly softened, about 5 minutes. Add tortilla chips, then eggs, stirring until almost set, for 3 to 4 minutes. Finally, add black beans and salsa, stirring to combine and heat through for about 5 minutes.
  • Garnish chilaquiles with crumbled queso fresco, diced red onion, ripe avocado, and fresh cilantro. Serve piping hot.
