Swap dry legumes for refried beans in a flavorful ham and vegetable chili soup.
Ingredients:
  • 1 teaspoon oil
  • 1/2 cup chopped green bell pepper
  • 1/4 cup finely chopped onion
  • 1 cup finely chopped cooked ham
  • 2 (15.5-oz.) cans refried black beans with lime juice
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon chili powder
  • 1 1/2 cups water
  • 2 tablespoons sour cream
  • 2 tablespoons chopped fresh cilantro, if desired
Instructions:
  • In a 3-quart saucepan, warm the oil over medium heat. Sauté the bell pepper and onion for 2 to 3 minutes until they are crisp-tender.
  • Combine all remaining ingredients, excluding sour cream and cilantro, and mix thoroughly. Cook over medium heat for approximately 5 minutes or until heated through, stirring often. Serve each portion with a spoonful of sour cream and a sprinkle of cilantro.
