Mini savoury mighty muffins

Savory ham and cheese veggie muffins - ideal for snacking or post-workout protein.
Ingredients:
  • 80g (½ cup) wholemeal self-raising flour
  • 45g (¼ cup) pepita and sunflower seed mix
  • ¼ cup finely grated zucchini
  • ¼ cup finely grated carrot
  • ¼ cup coarsely grated low-fat tasty cheese
  • 50g shaved leg ham, chopped
  • 2 tsp finely chopped fresh chives
  • 200g tub Cottage Cheese
  • 60ml (¼ cup) avocado or hempseed oil
Instructions:
  • Preheat your oven to 200C/180C fan forced and grease a 24-hole mini muffin pan with a light touch.
  • In a large bowl, mix together the flour, seeds, zucchini, carrot, cheese, ham, and chives.
  • In a large jug, whisk together eggs, cottage cheese, and oil. Pour the mixture into the flour and stir until just combined.
  • Fill each hole of the pan with a generous tablespoon of the mixture. Bake in the oven for 12-15 minutes until golden and fully cooked. If using a silicone mini muffin pan that fits in your air fryer, lightly grease it and air fry at 180C for 8 minutes or until golden.
