Mini Coronation quiches recipe

Celebrate King Charles with our quick and easy mini coronation quiches! We use frozen edamame and store-bought pastry for a buttery and cheesy twist on the classic. Perfect for a party - make ahead and bake on the day!
Ingredients:
  • 3 sheets frozen shortcrust pastry, just thawed
  • 120g (3/4 cup) frozen podded edamame
  • 200g baby spinach, washed
  • 4 eggs
  • 250ml (1 cup) thickened cream
  • 40.00 ml chopped fresh chives
  • 115g (1 1/3 cups) coarsely grated vintage cheddar cheese
Instructions:
  • Preheat your oven to 180C/160C fan-forced, then lightly grease twelve 125ml (1/2 cup) muffin pans with oil spray.
  • Cut 4 discs from each pastry sheet using an 11cm round cutter. Press the discs into the muffin pan, smoothing out any creases. Line with baking paper, fill with pastry weights or rice, and bake for 10 minutes. Remove paper and weights, bake for another 5 minutes until golden. Let cool for 10 minutes before using.
  • Place the edamame in a microwave-safe bowl and cover with plastic wrap. Microwave on HIGH for 3 minutes until thawed. Let it cool. In a separate microwave-safe bowl, place the spinach and cover with plastic wrap. Microwave on HIGH for 2 minutes until just wilted. Let it cool. Squeeze excess liquid from the spinach and coarsely chop using your hands.
  • Combine eggs, cream, and chives in a jug, whisking until well blended. Season to taste.
  • Layer half of the cheese in the pastry cases, followed by spinach and edamame. Gently pour in the egg mixture and sprinkle with the remaining cheese. Bake until lightly browned, about 25 minutes. Serve and enjoy!
