Ingredients:
  • 4 eggs
  • 60ml (¼ cup) milk
  • 20.00 gm self-raising flour
  • 425g can Simply Tuna in Vegetable Oil, drained
  • 145g (1 cup) frozen corn kernels
  • 2 green shallots, thinly sliced
  • 80g (1 cup) pre-grated cheddar
  • 6 cherry tomatoes, halved
Instructions:
  • Preheat your oven to 180C/160C fan forced, and generously grease a 12-hole muffin pan with oil or butter.
  • In a spacious bowl, combine whisked eggs, milk, and flour. Season the mixture. Add tuna, corn, shallot, and most of the cheese. Stir until well combined.
  • Evenly distribute the egg mixture into the prepared pan holes. Sprinkle the remaining cheese and place the tomato halves on top.
  • Bake the quiches for 25 minutes or until they are just set. Allow them to cool in the pan for 10 minutes before serving warm or at room temperature.
