Cheesy mini quiches with sausage and creamy potatoes, perfect for a quick and satisfying bite.
Ingredients:
  • cooking spray
  • 1 pound bulk sausage
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Swiss cheese
  • 0.5 cup chopped green onion
  • 8 eggs
  • 0.66666668653488 cup instant potato flakes
  • 0.5 cup heavy whipping cream
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and grease 36 mini muffin cups using cooking spray.
  • In a large skillet over medium-high heat, cook the sausage, stirring occasionally, until it is crumbly and evenly browned, about 10 minutes. Remove and discard any excess grease after cooking.
  • Evenly distribute sausage, Cheddar cheese, Swiss cheese, and green onion into the muffin cups.
  • In a bowl, combine eggs, potato flakes, and cream, then season with salt and pepper. Pour this mixture evenly over the sausage and cheese in the muffin cups.
  • Bake in the oven until quiches are set in the middle and lightly browned, approximately 22 minutes. Let them cool for 5 minutes before serving.
