Member maltymojo's super easy and yummy muffins - a must-try!
Ingredients:
  • 150g self-raising flour
  • 165g brown sugar
  • 2.50 gm ground cinnamon
  • 2 eggs, lightly beaten
  • 160ml olive oil
  • 500.00 ml finely grated carrot (about 4 carrots)
  • 30.00 ml poppy seeds
  • 120g icing sugar
  • 21.00 gm fresh orange juice
Instructions:
  • 1. Preheat your oven to 180°C. Grease 8 muffin pans each with a 1/2 cup (125ml) capacity. 2. In a bowl, mix together the self-raising flour, brown sugar, and cinnamon.
  • Mix together the eggs and olive oil. Incorporate the dry ingredients until fully combined. Fold in the carrots and poppy seeds until thoroughly mixed.
  • Spoon the mixture into the muffin pans. Bake for 25-30 minutes or until a skewer comes out clean. Let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • Place a wire rack over a tray. Combine icing sugar and orange juice in a small bowl, then spoon over the cooled muffins. Set aside to completely set before serving.
