Carrots and radish in zesty orange dressing - sweet and spicy flavors dance in your mouth.
Ingredients:
  • 1 bunch radishes, washed, dried, stems and roots trimmed, thinly sliced
  • 2 celery sticks, trimmed, thinly sliced diagonally
  • 2 carrots, peeled, cut into matchsticks
  • 1 x 100g pkt snow pea sprouts
  • 80ml (1/3 cup) fresh orange juice
  • 65g (1/3 cup) flame raisins
  • 9.20 gm olive oil
  • Salt
  • Freshly ground black pepper
Instructions:
  • Mix the radish, celery, carrot, and snow pea sprouts in a bowl. Combine orange juice, raisins, and oil in a jug, then taste and season with salt and pepper.
  • Drizzle dressing over the salad, gently toss, and serve immediately with mint & piri piri chicken skewers.
