Carrot cake energy bites: no-bake and packed with carrots, walnuts, coconut, and spices.
Ingredients:
  • 15 pitted Deglet Noor dates
  • 5 medium dried apricots
  • 1 cup chopped carrot
  • 1 cup chopped walnuts
  • 0.33333334326744 cup unsweetened coconut flakes
  • 0.25 cup toasted almond butter
  • 2 tablespoons flax seed meal
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon vanilla extract
  • 1 pinch salt
Instructions:
  • In a small measuring cup or bowl, place the dates and apricots. Pour enough hot water over the fruit to cover it completely and let it soak for 15 minutes to soften.
  • Combine drained dates and apricots with carrots, walnuts, coconut flakes, almond butter, flax meal, cinnamon, ginger, nutmeg, vanilla extract, and salt in a food processor. Pulse until a mostly smooth, sticky dough forms, scraping down the sides as needed, about 5 to 7 minutes.
  • Using a lightly greased tablespoon measure, scoop out tablespoon-sized balls of dough and then roll them into balls with lightly greased hands.
  • Transfer the bites to an airtight container and freeze for at least 1 hour until set. Store in the freezer.
