Carrot cake cookies with creamy vanilla frosting - all the flavor of carrot cake in a delightful cookie.
Ingredients:
  • 0.5 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 (8 ounce) can crushed pineapple, drained
  • 1 cup raisins
  • 0.75 cup shredded carrots
  • 2 cups all-purpose flour
  • 2 tablespoons ground cinnamon
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup chopped walnuts
  • 4 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla
  • 2 1/2 to 3 cups powdered sugar
Instructions:
  • Prepare for cookie perfection: Collect all ingredients. Preheat oven to 350°F (175°C). Grease cookie sheets or line with parchment paper.
  • Combine butter, brown sugar, and white sugar in a large bowl and beat with an electric mixer until smooth.
  • Gradually incorporate eggs one by one until fully blended. Gently fold in crushed pineapple, carrots, and raisins.
  • Mix the flour, baking powder, baking soda, salt, and cinnamon together, then gently combine it with the carrot mixture. If desired, add 3/4 cup of walnuts and fold them in.
  • Scoop dough onto the trays, leaving 2 inches of space between each spoonful.
  • Bake in the preheated oven for 14-16 minutes until tops are set. Cool cookies on the sheets for 2 minutes, then transfer to wire racks to cool completely.
  • Prepare the decadent cream cheese frosting by whipping cream cheese, butter, and vanilla in a large bowl with an electric mixer until light and fluffy. Gradually blend in powdered sugar until smooth and easy to spread.
  • Spread the delicious cream cheese frosting on the cooled cookies and top with the remaining 1/4 cup of walnuts for extra crunch and flavor, if you'd like.
