Award-winning Carrot Cake Cookies: A delightful twist on a classic, these cookies capture the essence of carrot cake with a luscious cream cheese frosting. Just whip up from a cookie mix for a treat that will leave you craving more.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
  • 1/2 cup butter or margarine, softened
  • 1/2 cup grated carrots
  • 1 tablespoon water
  • 1 teaspoon ground cinnamon
  • 1 egg
  • 4 oz (half of 8-oz package) cream cheese, softened
  • 1 tablespoon butter or margarine, softened
  • 1 1/2 cups powdered sugar
  • 1/4 cup finely chopped nuts, if desired
Instructions:
  • Preheat oven to 375°F. Mix cookie ingredients in a large bowl until a stiff dough forms.
  • Place teaspoonfuls of dough onto ungreased cookie sheets, keeping each one 2 inches apart.
  • Bake for 9 to 10 minutes until edges are lightly golden. Then let them cool for 2 minutes before transferring to a cooling rack. Allow to cool completely for about 30 minutes.
  • Mix cream cheese, 1 tablespoon butter, vanilla, and powdered sugar in a small bowl until smooth. Spread the frosting over the cookies, sprinkle with nuts, and store tightly covered in the refrigerator.
