Carrot Cake Oatmeal: Microwaved breakfast with carrots, pineapple, cinnamon, ginger, and walnuts.
Ingredients:
  • 0.66666668653488 cup chopped fresh pineapple
  • 0.5 cup sliced carrot
  • 1 teaspoon water
  • 0.66666668653488 cup almond milk
  • 0.5 cup old-fashioned oats
  • 0.5 teaspoon ground cinnamon
  • 1 tablespoon chopped walnuts
Instructions:
  • In a microwave-safe bowl, mix pineapple, carrot, and water. Microwave until carrots and pineapple are partially softened, about 1 to 2 minutes.
  • Combine almond milk, oats, cinnamon, and ginger in a bowl. Microwave for 1 minute. Stir well. Microwave in 30-second intervals, stirring after each, until oats are tender, about 1 to 2 minutes more. Sprinkle with walnuts before serving.
