Delicious holiday dish packed with nutrition, easily customizable with walnuts instead of pecans.
Ingredients:
  • 1 cup raisins
  • 0.33329999446869 cup shredded carrots
  • 2 cups water
  • 1 cup all-purpose flour
  • 1 cup quick cooking oats
  • 1.5 teaspoons artificial sweetener
  • 0.5 cup margarine, softened
  • 0.25 cup egg substitute
  • 0.33300000429153 cup pecans, coarsely chopped
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 7x11 inch baking dish.
  • In a saucepan, mix together raisins, carrots, and water. Bring to a boil, then lower the heat and simmer for 10 minutes. Let cool off before serving.
  • Combine the flour, oatmeal, sugar substitute, salt, baking soda, and cinnamon in a mixing bowl.
  • Combine the margarine, egg substitute, and vanilla in a separate bowl, then mix into the flour mixture until well combined.
  • Combine the raisin mixture and nuts until evenly mixed, then transfer to the baking pan.
  • Bake for 35 minutes, or until a toothpick inserted in the center comes out clean.
