Delicious morning surprise muffins with whole wheat, oatmeal, raisins, carrots, pineapple, coconut, and a cream cheese center. Perfect for breakfast, loved by kids, and easily customizable. Enjoy this tasty treat!
Ingredients:
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 0.75 cup white sugar
  • 0.75 cup brown sugar
  • 1 cup canola oil
  • 3 eggs, beaten
  • 1 teaspoon vanilla extract
  • 0.5 cup uncooked rolled oats
  • 0.5 cup flaked coconut
  • 0.5 cup raisins
  • 2 cups shredded carrots
  • 1 (8 ounce) can crushed pineapple, drained with juice reserved
  • 0.25 cup softened cream cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and give your muffin tins a gentle greasing.
  • Combine all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and cinnamon in a large bowl. Create a well in the center and add white sugar, brown sugar, canola oil, eggs, and vanilla. Gently mix until combined. Fold in oats, coconut, raisins, carrots, and pineapple.
  • Combine reserved pineapple juice with cream cheese in a bowl. Fill muffin cups halfway with batter, saving some for later. Spoon a teaspoon of cream cheese mixture into each cup. Top with remaining batter until cups are 2/3 full.
  • Bake in the preheated oven for 25 minutes, or until a knife inserted in the center of a muffin comes out clean.
