Start your day with scrumptious oatmeal and raisin cookies, flavored with honey instead of sugar - a guilt-free twist on classic carrot cake flavors.
Ingredients:
  • 1 cup honey
  • 0.66666668653488 cup coconut oil
  • 2 cups grated carrots
  • 2 eggs
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 3 cups quick-cooking oats
  • 1 cup raisins
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and line 2 cookie sheets with parchment paper.
  • In a large bowl, whisk together the honey and coconut oil until creamy using an electric mixer. Add the carrots and eggs, and mix thoroughly.
  • In a large bowl, combine and sift together flour, baking powder, cinnamon, nutmeg, baking soda, and salt. Add this mixture to the wet ingredients and mix thoroughly. Then, stir in oats, raisins, and walnuts until evenly incorporated.
  • Spoon dough onto cookie sheets, spacing 2 inches apart. Flatten with a fork, if desired.
  • Bake until tops are golden, approximately 15 minutes. Let cool on the baking sheet for 1 minute before transferring to a wire rack to cool completely.
