Healthier carrot cake with reduced oil and sugar, bursting with flavor. Perfect for picnics and parties.
Ingredients:
  • 4 large eggs
  • 0.75 cup vegetable oil
  • 1.5 cups white sugar
  • 2 teaspoons vanilla extract
  • 2 cups whole wheat pastry flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 3 cups grated carrots
  • 1 cup chopped pecans
  • 0.25 cup butter, softened
  • 1 (8 ounce) package Neufchatel cheese, softened
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 9x13-inch pan by greasing and flouring it.
  • For the cake batter, combine eggs, oil, white sugar, and vanilla in a large bowl. Add flour, baking soda, baking powder, salt, and cinnamon. Mix in carrots and fold in pecans before pouring into the prepared pan.
  • Bake in the oven until a toothpick inserted into the center comes out clean, for 40-50 minutes. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Prepare the frosting by mixing together butter, Neufchâtel cheese, confectioners' sugar, and vanilla until smooth and creamy, then fold in chopped pecans.
  • Frost the cooled cake completely with the frosting.
