Upgrade traditional oatmeal cookies with a healthier twist: sweet carrots complement dried cranberries for a nutritious take on a classic treat.
Ingredients:
  • 0.5 cup butter, softened
  • 0.25 cup non-fat plain yogurt
  • 1 cup packed light brown sugar
  • 0.5 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 3 cups quick cooking oats
  • 1 cup chopped walnuts
  • 0.5 cup semisweet chocolate chips
  • 0.25 cup carrots, shredded
  • 0.25 cup dried cranberries
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • Cream together butter, yogurt, brown sugar, and white sugar using an electric mixer until smooth. Mix in eggs one at a time, followed by vanilla extract. Gradually add flour and baking soda until just mixed. Gently fold in quick oats, walnuts, chocolate chips, carrots, and cranberries. Roll dough into walnut-sized balls and space them 2 inches apart on ungreased baking sheets.
  • Bake in a preheated oven until cookies are beautifully golden for about 12 minutes. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
