Irresistible carrot cake dip with cream cheese, pineapple, and warm spices. Perfect with cinnamon pretzels, graham crackers, and apple slices.
Ingredients:
  • 2 carrots, peeled and grated
  • 1 tablespoon butter
  • 1/4 teaspoon kosher salt
  • 1/4 cup brown sugar
  • 16 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup confectioner’s sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon nutmeg
  • 8 ounces crushed pineapple, well drained
  • 1/2 cup chopped toasted walnuts, plus more for garnish if desired
Instructions:
  • In a small skillet over medium-high heat, melt butter. Add carrots and salt, cook for 1 minute. Sprinkle brown sugar and cook until it dissolves, about 1 minute. Remove from heat and drain on paper towels.
  • In a large bowl, mix cream cheese, vanilla, confectioner’s sugar, cinnamon, ginger, and nutmeg until smooth and slightly fluffy using an electric mixer. Fold in the reserved carrot mixture, pineapple, and walnuts until fully combined.
  • Chill in the fridge for 1 hour or until serving time. Sprinkle with more walnuts and cinnamon, if desired.
