Salty-sweet carrot chips; a healthier twist on potato chips with just carrots, olive oil, and salt.
Ingredients:
  • 4 carrots, washed
  • 2 teaspoons extra-virgin olive oil
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and position one rack on the highest level and another on the bottom.
  • Peel carrots into thin strips using a vegetable peeler and place them in a large bowl. Drizzle olive oil over the strips and toss until evenly coated. Season with salt and toss once more. Spread the carrots onto 2 baking sheets in a single layer to prevent overlapping.
  • Place one baking sheet on the top rack and the other on the bottom in the preheated oven. Bake the carrots for 6 minutes, then switch racks and bake for an additional 6 minutes until crisp. Allow the chips to cool slightly before serving.
