Pair these crispy vegetable chips with a succulent roast for a tasty and fun way to enjoy your daily dose of veggies.
Ingredients:
  • 4 carrots, peeled
  • 1 litre vegetable oil, for deep-frying
  • 2 tsp fresh rosemary leaves, chopped
  • 4.80 gm sea salt
  • 1/2 tsp black pepper, cracked
Instructions:
  • Create delicate carrot noodles by spiralizing the carrot using a spiral slicer. Cut the long noodles into shorter lengths and gently pat dry with a paper towel to eliminate any extra moisture.
  • Heat oil in a large deep frying pan over medium-high heat.
  • In two batches, sauté the carrots until golden and crisp for 4 to 5 minutes. Place them on a baking tray lined with paper towel. Sprinkle with rosemary, sea salt, and cracked pepper. Toss to coat and serve.
