Delicious and budget-friendly Asian fish ball curry for any occasion.
Ingredients:
  • 1kg redfish fillets (see note)
  • 87.50 gm Thai green curry paste
  • 57.50 gm vegetable oil
  • 1 brown onion, sliced
  • 1 carrot, sliced
  • 400ml can coconut cream
  • 375g green beans, trimmed, halved
  • 24.40 gm fish sauce
  • Steamed white rice, to serve
Instructions:
  • Combine the fresh fish with a vibrant tablespoon of curry paste in a food processor until a smooth mixture forms. Shape the mixture into flavorful balls using tablespoons as a guide.
  • In a large frying pan over medium-high heat, heat 2 tablespoons of oil. Cook fish balls in batches for 6 minutes or until golden and fully cooked. Drain on paper towel.
  • In a large saucepan over medium-high heat, add the remaining oil and onion. Sauté for 3 minutes until soft. Stir in the remaining curry paste and sauté for 1 to 2 minutes until fragrant. Add the carrot and coconut cream, bring to a boil, then reduce heat to low and simmer for 5 minutes. Stir in beans, fish sauce, and fish balls, simmering for an additional 2 minutes until the beans are tender and the fish balls are heated through. Serve with rice.
