Indulge in a light and refreshing pasta melon salad for a wholesome lunch choice.
Ingredients:
  • 300g small shell pasta
  • 1/2 rockmelon, seeds discarded
  • 1/2 honeydew melon, seeds discarded
  • 220g tub bambini bocconcini, drained
  • 250g cherry tomatoes
  • 82.50 ml small fresh basil leaves
  • 1/4 cup honey and mustard dressing
Instructions:
  • Boil pasta in a large saucepan according to package instructions. Drain and rinse with cold water. Drain again.
  • Use a melon baller to scoop small balls from the melons. Place the balls on a paper towel-lined baking tray to drain. Combine the pasta, melon balls, bocconcini, tomatoes, and basil in a large bowl. Season with salt and pepper, then toss to mix everything together.
  • Portion the delectable pasta salad into 4 individual lunchboxes, then distribute the delightful dressing into 4 small containers. Chill in the refrigerator until ready to enjoy.
