Elevate your lunch game with this savory sausage pasta salad.
Ingredients:
  • 8 beef chipolata sausages
  • 250g dried wholemeal penne
  • 250.00 ml frozen peas
  • 81.68 gm mayonnaise
  • 20.00 ml red wine vinegar
  • 11.80 gm wholegrain mustard
  • 1 carrot, cut into matchsticks
  • 30g baby spinach, shredded
Instructions:
  • Heat sausages in a small non-stick pan over gentle heat, turning occasionally for 10 minutes until fully cooked. Allow to cool before slicing into thick pieces.
  • Cook the pasta in a saucepan of boiling water for 10 minutes, adding peas during the last minute of cooking, until the pasta is just tender. Drain, rinse under cold water, and drain again.
  • In a large bowl, mix together mayo, vinegar, and mustard. Add pasta, carrot, and spinach. Season with salt and pepper and toss until everything is well combined. Finally, gently mix in the sausages. Transfer to an airtight container and refrigerate for 1 day.
