Whip up a quick and satisfying pasta salad in under 30 minutes!
Ingredients:
  • 300g dried orecchiette pasta (see note)
  • 4 (70g each) Italian pork sausages
  • 56.88 gm olive oil
  • 500g cherry tomatoes, halved
  • 400g can cannellini beans, drained, rinsed
  • 50g baby spinach leaves
  • 125.00 ml fresh basil leaves
  • crusty bread, to serve
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until tender. Drain well.
  • Heat a large non-stick frying pan over medium-high heat until hot. Cook the sausages for 3 minutes on each side or until fully cooked. Remove from the pan and slice.
  • In a pan, heat a tablespoon of oil. Add garlic and tomatoes and cook for 5 minutes, stirring occasionally, until tomatoes are just tender.
  • In a large bowl, combine the remaining oil, pasta, sausage, beans, spinach, and basil. Gently toss with the tomato mixture. Serve with crusty bread.
