Indulge in a simple and affordable family-friendly salad for Monday night dinner.
Ingredients:
  • 375g tortiglioni pasta or large spiral pasta
  • 36.40 gm olive oil
  • 500g pork sausages
  • 2 zucchini, sliced lengthways
  • 250g yellow or red teardrop tomatoes
  • 125g rocket
  • 300g bocconcini cheese, sliced
  • 64.38 gm Italian salad dressing
Instructions:
  • Boil pasta in a generously seasoned pot of water as per package instructions until tender. Drain, place in a bowl, and mix with 1 tablespoon of oil. Allow to cool down.
  • Preheat the barbecue grill on medium heat. Grill the sausages, turning occasionally, for 15 minutes until they are just cooked through. Set them aside to cool slightly. Next, grill the zucchini for 6 minutes until they have beautiful grill marks. Transfer them to a plate. Toss the tomatoes in the remaining oil and barbecue for 1 minute on the plate.
  • Slice the sausages into thick pieces. Combine the sliced sausages, zucchini, tomatoes, rocket, and bocconcini with the pasta. Drizzle the dressing over the mixture. Season with salt and pepper, then toss everything together before serving right away.
