Elevate lunch with a vibrant chorizo and calamari pasta salad.
Ingredients:
  • 250g dried risoni pasta
  • 75.08 gm olive oil
  • 2 (170g each) chorizo, chopped
  • 500g calamari rings
  • 2 medium tomatoes, deseeded, finely chopped
  • 40.00 ml red wine vinegar
  • 125.00 ml fresh flat-leaf parsley leaves
Instructions:
  • In a large saucepan, cook pasta in boiling salted water following packet directions until tender. Drain pasta.
  • Heat 1 tablespoon of oil in a large, non-stick frying pan over medium heat. Add chorizo and cook for 3 minutes until browned. Stir in calamari and cook for an additional 3 minutes until calamari is cooked through.
  • In a large bowl, mix the remaining oil, tomato, and vinegar. Add in the pasta, chorizo mixture, and parsley. Gently toss to combine all ingredients. Ready to serve.
