Simple and delicious homemade Italian focaccia, perfect for any meal.
Ingredients:
  • 1/2 x 1 kg pkt premium bread mix crusty ancient grains
  • 315ml warm water
  • 99.00 gm brand basil pesto
  • 1 chorizo, sliced
  • 300g Italian-style antipasto mix (see note)
  • 220g tub brand bocconcini, drained, torn
  • 20.00 ml rosemary leaves
  • Mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 220°C (200°C fan). Follow the packet directions to prepare the bread mix with water. Knead the dough for 2 minutes until smooth and elastic.
  • On a greased tray, shape the dough into a 36cm x 26cm rectangle, then use your fingers to create deep indents. Bake for 10 minutes.
  • Drizzle the pesto on top, then scatter the chorizo and vegetables. Bake for an additional 15-20 minutes until the base is crispy. Finish with bocconcini and fresh rosemary. Serve alongside a fresh salad.
