Delicious pasta and egg salad, ideal for pairing with leftover roasts.
Ingredients:
  • 250g dried pasta twists
  • 4 hard-boiled eggs, peeled, chopped
  • 2 celery sticks, finely chopped
  • 1 small red capsicum, finely chopped
  • 4 green onions, chopped
  • 82.50 ml flat-leaf parsley leaves, chopped
  • 163.35 gm whole-egg mayonnaise
  • 17.70 gm wholegrain mustard
  • 21.00 gm lemon juice
Instructions:
  • Boil pasta in a large saucepan of salted water following packet instructions until tender. Drain and let cool.
  • In a large bowl, mix together the pasta, eggs, celery, capsicum, onions, and parsley.
  • Combine creamy mayonnaise, tangy mustard, zesty lemon juice, and a dash of salt and pepper. Drizzle the flavorful dressing over the pasta and mix until fully coated.
