Whip up a quick and tasty ham, egg, and pasta salad using leftovers for a crowd-pleasing picnic dish in 20 minutes!
Ingredients:
  • 4 cups uncooked elbow macaroni (16 oz)
  • 1 cup diced cooked ham
  • 1 cup sliced celery
  • 1/2 cup chopped green onions
  • 1/4 cup sweet pickle relish
  • 1 jar (2 oz) diced pimientos, drained
  • 4 hard-cooked eggs, chopped
  • 1 cup salad dressing or mayonnaise
  • 2 tablespoons yellow mustard
  • 1/4 teaspoon pepper
Instructions:
  • Prepare and cook the macaroni following the instructions on the package. Once cooked, rinse with cold water to cool down and ensure no excess water remains.
  • Combine the cooked macaroni, ham, celery, onions, pickle relish, and pimientos in a large bowl.
  • In a small bowl, thoroughly combine all dressing ingredients. Pour over salad and toss to coat. Gently fold in hard-cooked eggs. Serve right away or refrigerate until ready to enjoy.
