Smoked Carrot Bisque

Vegetarian-friendly smoked carrot-curry soup loved by all!
Ingredients:
  • 5 pounds carrots, peeled and trimmed
  • mesquite or hickory wood chips, as needed for smoker
  • 2 tablespoons vegetable oil
  • 2 onions, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 4 cloves garlic, chopped
  • 2 stalks celery, chopped
  • 4.5 teaspoons ground turmeric
  • 2 teaspoons curry powder
  • 5 quarts vegetable stock
  • 0.25 cup butter
  • 2 cups cream
  • salt and pepper to taste
Instructions:
  • Lay peeled whole carrots on the smoker rack and smoke for 1 1/2 to 2 hours.
  • In a large soup pot, heat vegetable oil over medium heat. Sauté onions, jalapeño pepper, and garlic until onions are soft and translucent, about 5 minutes. Add chopped carrots and celery, cook for an additional 5-10 minutes until celery is tender.
  • Blend the vibrant turmeric and aromatic curry powder smoothly into the mixture, then add the flavorful vegetable stock. Let it bubble on high heat until it reaches a boil. Lower the heat to a gentle simmer for 1 1/2 hours, giving it a stir every now and then.
  • Separate the vegetables from the soup and blend until silky smooth. Return the puree to the pot and simmer for an additional 30 minutes.
  • Incorporate butter into soup until melted, blend in cream, season with salt and pepper to taste. Finish by straining soup through a fine mesh strainer before serving.
