Tasty, protein-packed, low-fat option.
Ingredients:
  • 2 leeks, chopped
  • 1 carrot, chopped
  • 2 celery stalks, chopped
  • 2L (8 cups) chicken style liquid stock, heated
  • 150g thin dried egg noodles
  • 180g pea
  • 250g smoked chicken breast, shredded (see note)
  • Flat-leaf parsley leaves, to serve
Instructions:
  • In a large pan, warm oil over medium-low heat. Sauté leek until soft, about 6-8 minutes. Stir in carrot and celery, cooking until soft for 5-6 minutes. Simmer with stock. Add noodles and cook until tender, about 6 minutes. Toss in peas for the last 2 minutes of cooking. Enjoy!
  • Mix in the chicken and let it simmer for a minute until it's heated. Serve in individual bowls, season to taste, and garnish with fresh parsley leaves.
