Winner chicken salad: Quick, easy, healthy.
Ingredients:
  • 125g glass noodles (bean thread vermicelli) or rice vermicelli
  • 2 skinless smoked chicken breast fillets (see note) (250g total), shredded
  • 2 carrots, cut into matchsticks
  • 1 red capsicum, cut into matchsticks
  • 1 long red chilli, seeds removed, thinly sliced
  • 90g bean sprout
  • 125.00 ml fresh coriander
  • 125.00 ml mint leaves
  • 80ml lime juice
  • 48.80 gm fish sauce
Instructions:
  • - Prepare the noodles by soaking them in a bowl of boiling water or cooking as per the package instructions. Then, drain and refresh in cold water before draining again. Combine the noodles with chicken, carrot, capsicum, chili, bean sprouts, and herbs in a large bowl.
  • Combine the vibrant flavors of lime juice, sugar, and fish sauce in a small bowl, stirring until the sugar completely dissolves.
  • Drizzle the dressing over the salad, mix thoroughly, and enjoy right away.
