Elevate this Asian salad with crunchy roasted peanuts for an irresistible twist.
Ingredients:
  • 200g dried rice-stick noodles
  • 21.00 gm lime juice
  • 24.40 gm fish sauce
  • 16.00 gm brown sugar
  • 1 long red chilli, finely chopped
  • 500.00 ml beansprouts, trimmed
  • 187.50 ml fresh mint leaves
  • 187.50 ml fresh coriander leaves
  • 1/4 small red onion, thinly sliced
  • 125.00 ml roasted salted peanuts
  • Fried onion, to serve (optional)
Instructions:
  • Place noodles in a large heatproof bowl and cover with boiling water. Allow to stand for 5 minutes or until tender, then drain and rinse under cold water.
  • Mix together the zesty lime juice, savory fish sauce, sweet sugar, and spicy chili in a bowl until the sugar is fully dissolved.
  • Toss noodles, beansprouts, mint, coriander, onion, peanuts, and lime juice mixture together in a bowl. Top with fried onion before serving, if desired.
