Smoked chicken, asparagus & potato salad

Delicious and complete meal of colorful chicken potato salad.
Ingredients:
  • 1 bunch asparagus, trimmed, halved lengthways
  • 1kg small chat potatoes
  • 40.00 ml white wine vinegar
  • 180ml (3/4 cup) Whole Egg Mayonnaise
  • 250g smoked chicken breast, shredded
  • 250g cherry tomatoes, halved
  • 55g (1/3 cup) pine nuts, toasted
  • 250.00 ml fresh basil leaves, torn
Instructions:
  • Bring a large saucepan of water to a boil on high heat. Add the asparagus and cook for 3 minutes until vibrant green and slightly tender. Transfer to a bowl of ice water to cool. Drain well.
  • Boil the potatoes until tender, then drain and let cool for 10 minutes. Halve them and transfer to a large bowl. Mix in the vinegar, season to taste, and toss everything together. Let it sit for another 10 minutes to cool before serving.
  • In a large bowl, mix together Praise Whole Egg Mayonnaise, asparagus, potato, chicken, tomato, and pine nuts. Toss well to combine all ingredients. Transfer to a serving bowl or platter and garnish with fresh basil.
