Transport your taste buds with exotic spiced carrot fritters.
Ingredients:
  • 2 large (about 340g) carrots, peeled, coarsely grated
  • 2 tsp finely grated fresh ginger
  • 40.00 ml besan (chickpea flour)
  • 1 eggwhite
  • 40.00 ml coarsely chopped coriander
  • 1 tsp black mustard seeds
  • 1 tsp cumin seeds
  • Vegetable oil or ghee, to shallow-fry
Instructions:
  • In a medium bowl, mix together the carrot, ginger, besan, egg white, and coriander. Heat a small frying pan over high heat and toast the mustard seeds and cumin seeds until aromatic and popping, about 1 minute. Remove the pan from the heat and add the seeds to the carrot mixture. Stir well to combine.
  • In a large non-stick frying pan over medium heat, heat oil or ghee. Spoon 3 tablespoonfuls of the carrot mixture into the pan, then firmly press it down with a spatula. Cook until golden brown and heated through, about 1-2 minutes per side. Transfer the cooked fritters to a plate lined with paper towel. Repeat this process for 5 more batches with the remaining carrot mixture, remembering to reheat the pan between batches. You should end up with approximately 18 delicious fritters.
  • Arrange the fritters on a platter and accompany with the delicious coconut sambal, refreshing cucumber pickle, and store-bought mango chutney.
