Whip up tasty veggie burgers with a blend of roasted cashews, sunflower seeds, brown rice, carrots, and onions for a nutritious meal.
Ingredients:
  • 3 cups uncooked brown rice
  • 6 cups water
  • 1 cup toasted cashews
  • 1 pound toasted unsalted sunflower seeds
  • 1 sweet onion, chopped
  • 6 carrots, chopped
  • 1 tablespoon extra virgin olive oil
  • salt to taste
Instructions:
  • Bring the rice and water to a boil in a large pot, then cover and simmer on low heat for 45 minutes.
  • Heat up the grill on high.
  • In a food processor, finely grind the toasted cashews and sunflower seeds. Transfer to a large bowl. Next, shred the onion and carrots until finely shredded in the food processor and combine with the ground nuts. Then, in the same food processor, blend the cooked rice and olive oil until smooth. Add to the bowl. Season with salt and shape the mixture into patties.
  • Prepare the grill by lightly oiling the grate. Grill the patties for 6 to 8 minutes on each side until they are beautifully browned.
