Warm Japanese rice salad recipe

5-Minute Lazy Dinner: Quick and easy meal using microwave rice and pre-shredded carrot for a simple and delicious meal.
Ingredients:
  • 2 x 250g pkt Microwave Black Rice
  • 4 radishes
  • 18.20 gm olive oil
  • 4 eggs
  • 220g (11 ⁄2 cups) podded frozen edamame
  • 160g (2 cups) pre-shredded carrot
  • 1/2 bunch fresh coriander, sprigs picked
  • Pickled ginger, to serve
  • 80ml (1 ⁄ 3 cup) Japanese Dressing Roasted Sesame
  • 5g pkt Ceres Organics Seaweed Chilli Snack
Instructions:
  • First, boil water in the kettle for the rice. Then, heat a non-stick frying pan over high heat. Meanwhile, cook the black rice in the microwave according to the instructions on the packet.
  • Slice the radishes using a mandoline while waiting for the kettle to boil and the pan to heat up.
  • Once the pan is sizzling, gently pour in the oil and carefully crack the eggs into the pan. Cover with a lid and cook for 3 minutes. Meanwhile, place the edamame in a heatproof bowl and cover with boiling water.
  • - Distribute the black rice evenly into serving bowls. Drain the edamame and arrange on top along with the carrot, fried eggs, radish, coriander, and pickled ginger. Drizzle the roasted sesame dressing over the bowl. Season to taste and serve with seaweed on the side.
