Zesty rainbow carrot salad.
Ingredients:
  • 1 garlic clove, crushed
  • 0.63 gm ground cinnamon
  • 0.63 gm ground cumin
  • 0.63 gm ground paprika
  • 80ml (1/3 cup) olive oil
  • 1 tsp white wine vinegar
  • 7.20 gm honey
  • 1/2 lemon, juiced
  • 2 large carrots, peeled, thinly sliced
  • 10 radishes, peeled, thinly sliced
  • 40.00 ml chopped flat-leaf parsley
  • 1 tsp orange flower water*
Instructions:
  • Combine garlic, spices, oil, vinegar, honey, and lemon juice in a bowl and whisk until well blended. Set aside.
  • Boil carrots briefly in seasoned water, then drain and cool. Toss with dressing while warm, then let sit at room temperature.
  • Just before serving, mix in the radish and parsley, then generously drizzle with fragrant orange flower water.
