Sweet potato and carrot muffins with a hint of sweetness and a satisfying chew from oats.
Ingredients:
  • 1 cup white whole wheat flour, sifted
  • 1 cup rolled oats
  • 2 (4 ounce) jars sweet potatoes baby food
  • 0.66666668653488 cup vegetable oil
  • 0.5 cup honey
  • 1 (4 ounce) jar carrot baby food
  • 2 tablespoons brown sugar, or to taste
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) while preparing your 12 muffin cups with a touch of grease or paper liners.
  • Combine flour, oats, baking soda, and cinnamon in a bowl. In a separate bowl, blend sweet potatoes, oil, honey, carrots, eggs, and brown sugar. Gently fold the wet ingredients into the dry until just combined. Spoon batter into muffin cups.
  • Bake in the oven until a toothpick inserted in the muffin comes out clean, about 15-20 minutes.
